Sarah Wicks. She had a mouth on her like the judge, but she also cared.
It's really too bad she was only in the first few episodes in the series. Now granted by Season 3 or so, she would've probably crowded the show a bit, but I just wish she had been on for longer.

Would've been nice to see her make it through the first season, at least, with a proper farewell. Then, it would'vemade more sense for McC to be agitating to hire a maid a year later, too.

Well I think overall the show really didn't need a maid. I think it complicated things, and I think that's why they ignored it. Here you have these two guys living together, and the viewer is gonna want to know where the maid is all the time. Especially a powerful character like Sarah.
I would've liked her to finish out Season 1 as a recurring character, but i'm kind of glad the whole thing was dropped in Seasons 2 & 3 (excluding "If You Could See What I See").

I think we need to clarify that Sarah wasn't a maid, she was a housekeeper. While I assume she did some of the day to day duties, cooking, general dusting, some laundry, etc. -- I would almost bet that a service was brought in periodically to do the biggies such as the gutters, the carpets, waxing, windows, garden, etc.
Even with Milt's slave labor program, add the size of the estate and all the work needed to keep it up plus the cases they will be on and, later, law school, and you just know help is needed.
